tonight, for me, that was extra chunky guacamole... mmmmmmm...
1. take 1 bunch of fresh cilantro, give it a rough chop & throw it in your bowl
2. halve 2 avocados, de-pit, scoop meat from the shells, dice them into small pieces and throw that into your bowl
3. dice half of a sweet vidalia onion and toss that into the bowl
4. cut two limes in half and squeeze over the cilantro, avocado, and onion in your bowl
5. mash it all up in your pestle and mortar if have one. if not, take out a little of your aggression on the mixture with the help of a strong fork. when all is said and done your guac should look like this
6. add salt and pepper to taste, but remember that if you're eating this with chips, they'll have a fair amount of salt on them already
7. turn on your oven to 300 degrees, get some of your favorite tortilla chips, cover them with a generous amount of grated cheese (i like a combo of monterey jack, cheddar, and asadero in this case), pop your soon-to-be-cheesey-chips in the oven for about 5 minutes... e voila!
pair your cheesey-chips & guac with a nice little fruit salad of fresh mango and blueberries. and a nice, bright, light dinner is served!
now, this dinner tastes best if
a) it is shared with a lovely friend

b) if it was made while listening and swaying your hips to buena vista social club
